Jus-Rol puff pastry

We've put together a few scrumptious serving suggestions that you can enhance your everyday meals with. With simple step-by-step instructions you can even get the kids involved.

Simple lunch ideas:

We are all pushed for time so why not try quick and easy pesto and roasted vegetable puff pastry rounds?

Ingredients

  • 4 x Jus-Rol™ Puff pastry rounds
  • 4 teaspoonfuls pesto or tapenade of your choice
  • 2 medium peppers – cut into chunks
  • 1 small red onion cut into wedges
  • Olive oil for drizzling
  • 100g feta cheese – crumbled
  • Few thyme leaves for garnish
  • Beaten egg to glaze

Method

Preheat oven to 220ºC (200ºC for fan assisted) 425ºF/Gas M7
Lay vegetable pieces on a baking sheet, drizzle lightly with oil and roast for approx. 15 minutes until just tender. (alternatively use ready roasted vegetables), allow to cool.

  1. Place the pastry rounds onto a lined baking sheet, spread centre's with tapenade leaving a border all round, top with roasted vegetables and scatter with crumbled feta.
  2. Brush borders with beaten egg, bake for 12 – 14 minutes until pastry has risen and is golden. Serve scattered with thyme leaves.

Last minute dinner that you need to attend? You wanted to bring a dessert but it's late afternoon and none of the cake shops will be open.  In 20 minutes you could prepare and bake a delicious tasty dessert, which everyone will love – quick apple tarts – serve with cream, custard or ice cream.

Ingredients

  • 1 x Jus-Rol™ Puff Pastry Ready Rolled Sheet – thawed
  • 3 small to medium English eating apples – choose ones with a red tinge to the skin such as Cox's
  • Beaten egg white to glaze
  • 2 – 3 tbsp caster sugar for sprinkling

Method

Preheat oven to 220ºC (200º for fan assisted ovens)/425ºF/ Gas M7

  1. Unroll pastry sheet, with a sharp knife, trim edges, then cut the sheet in half lengthways, and then each half into 3 equal pieces. Lay on a lined baking tin.
  2. Halve and core the apples BUT leave skin on, then thinly slice the apple halves. Place one sliced apple half; cut face down in the centre of each pastry piece.
  3. Brush apple and pastry borders with beaten egg white and dredge lightly with caster sugar.
  4. Bake for 12 – 14 mins until pastry is risen and golden. Serve warm or cold.

I love jus Rol, its versatile, and can change an ordinary meal say stew into a savoury pie. I have warm hands so for me pastry has always been a nightmare to make. But this changes that.

I enjoy the occasional "baking" session but WOW, this great pastry makes it so much easier and a lot quicker, I’ve used this several times now in a multitude of dishes including pies and tarts and all I can say is if you want to save time definitely give Jus-Rol a bash. :-)
